Tom,

Ryan Trebon weighs around 170-180 and runs 25psi front and rear. (for
reference)

Running pressures that low takes years of practice to get used to.

I'd recommend starting at 28psi front and rear and seeing how that feels.

Also note: the quality of tubular tyre and casing will affect the way a
tyre performs and feels, particularly at low pressures.

Higher quality tyres are designed to perform at their best at low
pressures. Low quality and cheap tubulars will not feel great at any
pressure.
