Go with the new Shimano Dura-Ace 9000 cables with SP-41 housing (in
whatever color you want). They are far superior to the 7900 PTFE cables and
will give your old shifters that super light action feel, closer to the new
9000 stuff. Sure they are not super cheap but nice cables and really nice
bar tape (Like the Shimano Pro Digital tape or the Lizard Skins) really can
change everything about a bike! I've done this to countless customers bikes
this year and they are all loving it!

Over the last few years, I've had great luck with Yokozuna Reaction
cables/housing, though they're pretty expensive:

http://www.competitivecyclist.com/yokozuna-reaction-universal-kit?ti=U2VhcmNoIFJlc3VsdHM6eW9rb3p1bmE6MToxOnlva296dW5h&skidn=YOK0005-WH-ONESIZ

But now I think the new polymer coated DA9000 cables & housing are even
better:

http://biketestreviews.com/cablesets-part-4-shimano-bc-9000/

Note that only the brake housing is actually different (BC-9000) than the
previous iteration (SP-41). The shift housing on DA9000 is still SP-41,
but the cables themselves have changed and are the new polymer coated
cables.

The other school of thought, of course, is that you should just change your
cables regularly and you'll be fine. We're definitely talking about
incremental differences here. That said, the new cables are pretty slick,
both figuratively and literally.

Seconded. I have found Shimano cable is reliable, easy to work with and
lasts for a long time.

Note that they do offer some color options too (black, white and
silver/gray last I looked). Your LBS will often only stock one color
since they buy it on a spool. It's worth checking around if you decide a
particular color would be more appealing to you.

I generally run Shimano on my Dura-Ace groups. I just find the
performance
is better. But this is just me. YMMV.
