I'm hoping to solicit some week long bike adventure suggestions for a trip in the first week of June. All the bike touring routes I've had on my todo list (Idaho Hot Springs, Lassen Volcanic Nat'l Park, North Cascades) involve mountainous terrain, and I'm not so sure things will have melted enough by then. And this is looking like the crucial week for escaping town!!

Any ideas of bike focused trips that hit these criteria would be much appreciated:
Within ~10 hours drive from Portland (pretty wide net)
Cyclocross bike worthy (aka paved/gravel/dirt roads all fine, less so single track)
Low traffic as possible
Breweries certainly wouldn't hurt

Also open to the idea of it being less of a bike tour, more of a destination with some cool rides fanning out in different directions.
