Ignore my original post, I found my problem.  I fitted my TT bike with the proper stem and threw on a 60mm onto my mtb, when I should have a 100mm on my mtb.  So my handle bar width should be good, and my steering should feel normal again once I put on the right stem.  OOPS.
This is what I get for having too many bikes, meaning too many that my wife barely allows :)

I'm wondering what the general width of mtb handle bars should be in relation to your shoulders?  I mainly ride XC/All-mtn, beginner stuff.  I measured my outside shoulders at 18" and my last year I cut my bars down to 23.75", so almost 6" wider.  But I read about a lot of guys with bars around the 700mm (27.5") range, but no idea how wide their shoulders are.

The reason that I'm wondering is that my steering feels a bit twitchy.

Oh yea, I'm running a 80-90mm stem.

And if it means anything, my shoulder bones are at 38cm, so my road bike is 40cm and my cx bike is 42cm, and both of those work perfect for me.  I did try a 38cm for road but that was to twitchy.
