To second Erik's point, at your weight I would not take too many chances. Also, at 200 lbs, lightweight wheels are not going to make much difference, if any, in climbing. Better to focus on reliability. If you want aerodynamic wheels such as Zipp 404's, either get the clydesdale wheels, or get the Zipp clinchers. With the clincher tires today, I doubt you will notice much difference, and because the Zipp clinchers have aluminium rims, they are stronger. They are a bit heavier than the tubulars that are all carbon, but as I said, I doubt that the extra wheel weight is the reason why you will ever get dropped on a climb when you are competing against 150 lb climbers.

Lat year I blew a brand new tubular in the first use, and watched $80 go away. The year before, i hit a pothole and broker both the front and rear carbon rim. Foolishly, I raced another 40 miles on both broken wheels and finished the race, but when I took the tires off, the wheels fell apart. It appears that the tires were the only thing holding the wheels together. I doubt that would have happened with aluminium rims.

I still buy a lot of all carbon wheels because I am a weight weenie depite my 182 lb weight, but I would not recommend that you do as I do.

In cases such as myself- read heavy guys- it would appear the way to go is go with a "Clydesdale" type of wheel (extra spokes, etc.) to make up for the increased weight of the rider.
