Tape is not wide enough to go to the edge of the rim and the tire can lift off part way. I like my tires on all the way. Rolling resistance tests show poorly glued tires have more mechanical resistance than well glued tires.
Save the tape for times when you have to mount a tire in a hurry.
Don is right about tape being a hassle to remove. Blisters will result.
