I went with the tektro cr720's mainly for the price. I'm using Rival shifters and I've had no issues with the set up. However, I'm also a light weight, like a 130lb light weight, so my advice on any brakes really does not mean anything.
With any canti's I do advise this straddle http://www.universalcycles.com/shopping/product_details.php?id=16745&category=1613 The selling point is that you can "lock" down the straddle wire. Like when you normal straddle slides around and your brakes don't close evenly, this prevents that. Or for when your front brake hanger has to be mounted a little off to the side so the housing can go under your stem, this straddle can be monted off set and locked into place so you get even pull on your brakes.

I send David this, privately. Others might be interested:
If you want to go with mini Vs, try Tektro 926. They are very inexpensive and they work great. Here's something I wrote about them, and mini-vs in
general:

For cantilevers, Avid shorty brakes are good. Shimano makes some nice
ones. There are some nicer brakes out there but they are expensive.
The Shorty's come in various models. I think the 4 is the least
expensive. The 6 has brake shoes with replaceable pads, which is quite
nice.
