last all through the race. Plus they just taste great.

I call them Race Day Waffles.



Race Day Waffles:



? cup white flour

? cup whole wheat flour

? cup oat flour

? cup barley flour

? cup finely chopped pecans

4-tblsp flax seed meal

? tsp salt

2 tsp baking powder

1 tsp baking soda

2-tblsp brown sugar

2 cups soy milk (or regular milk, or a cup of each)

3 tblsp canola oil

1 tsp vanilla extract

2 eggs separated



In a medium bowl mix all the dry ingredients except

for the pecans.



In a large bowl beat the egg yolks, milk, oil and

vanilla until blended. Gradually mix in the flour

mixture. Stir in the pecans. In a small bowl beat the

egg whites to soft peaks (I do this by hand with a

whisk but you can use a mixer). Fold the egg whites

gently into the batter.



Bake using your waffle irons directions. Serve with a

sliced banana on top and warm maple syrup.



Add bacon or eggs on the side if you'd like some

Slice a whole apple and throw it in some boiling water with a handful of raisins and some cinnamon. When soft, throw in some oatmeal and a bit of your favorite granola. When ready, serve with yogurt and milk and, for a really long event, a poached egg or two. Fast, easy, yummy, nutritious. Eat the peanut butter sandwiches on the way home and the fish tacos in the evening with a good locally brewed bitter ale.

mileage. It is currently set up with a pretty tall and

original bar and/or stem back on. It's a nice little

bike and would be great for organized rides or Cycle

Oregon or just riding around. No pedals.

case you have an extra one lying around.



Last, I just had to share this recipe because it's so

good. These waffles have powered me for the last 2

Banana Belts and feature some good complex carbs to

last all through the race. Plus they just taste great.

I call them Race Day Waffles.



Race Day Waffles:



? cup white flour

? cup whole wheat flour

? cup oat flour

? cup barley flour

? cup finely chopped pecans

4-tblsp flax seed meal

? tsp salt

2 tsp baking powder

1 tsp baking soda

2-tblsp brown sugar

2 cups soy milk (or regular milk, or a cup of each)

3 tblsp canola oil

1 tsp vanilla extract

2 eggs separated



In a medium bowl mix all the dry ingredients except

for the pecans.



In a large bowl beat the egg yolks, milk, oil and

vanilla until blended. Gradually mix in the flour

mixture. Stir in the pecans. In a small bowl beat the

egg whites to soft peaks (I do this by hand with a

whisk but you can use a mixer). Fold the egg whites

gently into the batter.



Bake using your waffle irons directions. Serve with a

sliced banana on top and warm maple syrup.



Add bacon or eggs on the side if you'd like some

protein. You can also simplify by not separating the

eggs but the waffles won't be as light. Experiment if

you want, it's how I came up with this recipe.



The oat and barely flour should be available where

ever they have a good selection of Bob's Red Mill

products, or from the Red Mill store in Milwaukee.

Recipe By     : cooks.com

Serving Size : 9 waffles



   1      package       yeast

   2      cups          skim milk

   4      whole         eggs

   2      teaspoons     vanilla

   2 1/2 cups          flour, all-purpose

     1/2 teaspoon      salt

   2      tablespoons   sugar

     1/2 cup           butter



Sprinkle yeast over very warm milk (120F); stir to dissolve

Beat egg yolks add to yeast mixture with vanilla in large mixing bowl.

Add sifted flour, salt and sugar

Stir in melted butter and combine.

Let rise in refrigerator over night.

In the morning, beat egg whites until stiff and fold into batter.
