French Cycling trip coming up

Quick question for y'all.
Angela and I are doing some cycling in France this summer and we have a
quick question about bike security.
We are both taking our own bikes and want to know from those who have
travelled by bike in France before how concerned we should be with our
bikes in terms of safety - locking them up, keeping an eye on them at
all times, etc, etc.
If we step inside a shop in some small village, should we be concerned
with leaving them propped up against the front of the building,
unattended? I have heard that asking the shop owner if you can bring
them inside while you look around is OK. Or, should I just bank on
bringing along a thin cable lock? Most of the towns we're in are pretty
small, but we may ride into Dijon and Grenoble. I'm assuming the larger
the city, the more cautious we should be, but I really don't know for
sure. Just trying to keep the weight down!
