you could use some old shimano levers that release at the levers as well as at the calipers...
But you are probably using STI ..
The other option is to release the cable housing from a Cable Stop. You can shorten the cable housing stop maybe so that it is shorter to pull out.
Or have an easy-to-turn adjusting nut. Normal position would be way up.. Then spin it down for tire removal
Any of these would probably be easier then trying to redo the cam / toggle-over-center mechanism. Although for sure some sort extender off the cam or etc could be fabricated / made... its just that there seems to be many different caliper cam designs out there ? that each one would probably need to be custom.
