i would use soap and water (just so you can get all traces of grit gone...), then wd 40 or some other decent lubricant. (this is how a clean a chain too. Dish soap, grunge brush, and direct spray from a garden hose for proper dirt / grit removal.... then oil, let dry and oil some more...)
as far as taking apart a shimano STI shifter.... probably don't do it. its not worth the effort to get it back together and chances are you will not get it back together (yes, been there...). If you do take it apart, have a digital camera nearby and snap more pictures then you ever think you will need, as you dissassemble.

i have also had luck flushing w/ wd-40.
i have heard that dropping it into an ultrasonic jewelry cleaner works really well, but i've never seen it done.
