I will have a limited amount of vegan waffle mix for tomorrow's race at Alpenrose. If the demand is there, I will gladly continue to have a vegan waffle option. I've been experimenting with recipes - it's tough to find a vegan binder that works well in larger quantities. This week's recipe uses silken tofu - if you have a good recipe, let me know.
