On the road I have been very happy with Shimano tubeless wheels and Hutchinson tubeless tires.
With cross I ride a Bontrager 29er tubeless ready wheel set. I have used Stan's Raven 700 X 35c tires and they are OK. I have used Hutchinson's 700 X 34c tubeless ready Bulldog tires and so far I love them. I have heard of burping problems with some of the cross tubeless tires but I have not had that problem, maybe I ride soft/slow.
I think it is important with any tubeless tires to feel around the edges of the tire where the rim meets the tire for those little rubber hairs, they need to be removed or your tires will leak a lot. Bontrager tires are the worst for that. Hutchinson's don't seem to have that issue.
I am not very particular when it comes to sealant. I would be interested to hear if anyone has tried some sort of home made sealant that is cheaper and more environmentally friendly that the current over the counter brands. Maybe mix water and Elmer's glue, Metamucil, baking soda, or some other common household material?
