You laugh but those air guns are actually pretty well calibrated.
Typically each is on it's own regulator running bottled nitrogen. The
crew member with that duty usually uses only that gun and is accustomed
to how many hammer hits it takes to secure the fastener.

And before the race they will verify the torque of the setup with - you
guessed it - a torque wrench!

I just use a pneumatic impact wrench. See those pit crews at Indy or NASCAR races? You just know those wheels aren't coming off the cars. I figure that's good enough for me. Plus, I've discovered that in use the pneumatic wrench just shears the bolt heads right off. To me, that's an added level of security: "set and forget it" so to speak. Although, to change stems I have to throw away the whole bike, which is kind of a bummer... not to mention hell on my meager budget.
