You can't go too wrong riding south along the OR coast. Hiker/Biker camping (spaces guaranteed!) with hot showers, for $6/person/night at any state campground. Any piece of the coast is nice but it gets progressively nicer (with less traffic) as you move south.
My family takes an almost-annual bike-cation in the San Juan islands. We usually stay on one island and then use the ferries to explore a different island every day. But you can also do it like a traditional tour, from campground to campground, with ferry hops in between. Low traffic, and the island folks are very used to bikes on the road, with riders of all abilities.
