for your email! I do agree that refined rice is easier on the system than refined flour. I've done both GF and vegan waffles after people
started asking. If you've come by, you'd know that I usually make a
small batch of vegan for each race. The issue is that making various
waffle batters
takes a lot of time and GF mix (as you know) is very expensive. In the end, I get one
email like yours, I agree to do it, and then maybe one or two people
coming by for some all season - many races it's totally untouched.
That's after I've sent out repeated messages letting everyone
know about them. Pretty much the same over the past five years. If a
group was willing to commit to buying them, that would make it much
better for me.
I'm actually a fan of the vegan waffles I make - hearty multigrain mix with soft tofu as the egg replacement. Makes for a very dense, flavorful waffle. But still has gluten in it.

Hi Joshua!
Have you ever considered making gluten free waffles? Wheat makes me feel all gross and bloaty and my wife and son have Celiac disease and so can't eat the stuff (my son was rather disappointed when I told him "No waffles kiddo-- they're wheaty"). Besides which, rice (flour) is so much more digestible. :)

Many of you have already begun cyclocross racing, heckling and cheering this season and I understand that it has awakened a deep rumbling in your stomach and a craving in your palate for race-day Belgian waffles and Nutella. Makes me want them just writing about it...
